The ingredients needed to make Mushroom Soup:
  1. Take dried porcini mushrooms
  2. Get vegetable stock
  3. Take exotic mushrooms
  4. Make ready shallots, diced finely
  5. Make ready garlic cloves, crushed
  6. Take double concentrate tomato puree
  7. Get carrot, use a peeler to peel into ribbons
  8. Take butter
  9. Get fresh coriander, finely chopped
Instructions to make Mushroom Soup:
  1. Soak the porcini in 250ml of boiling water for 25mins. Then separate the stock and mushrooms. Keep the stock and chop the porcini.
  2. Melt the butter in a pan on a medium to low heat.
  3. Add the shallots, garlic and carrots to the pan and cook gently for 2-3mins.
  4. Add the coriander and all the mushrooms, cooking for another 2-3mins.
  5. Use a little bit of the vegetable stock to deglaze the pan. Then add in the porcini stock, tomato puree and vegetable stock. Season then bring up heat until the liquid begins to bubble.
  6. Cook for about 30-35mins on a low heat.
