The ingredients needed to make Leek and potato soup:
  1. Make ready 4 medium sized potatoes
  2. Make ready 2 large leeks
  3. Get 1 medium onion finely chopped
  4. Take 1 litre vegetable stock
  5. Make ready 250 ml milk
  6. Make ready Salt and pepper
Instructions to make Leek and potato soup:
  1. Finely chop the onion, peel and chop the potatoes, slice and wash the leeks (to remove any dirt)
  2. Heat 1 tbsp oil in a large pan with a lid and fry off the onion over a medium heat until soft. Then add the leeks and fry for another couple of minutes. Then add the chopped potatoes
  3. Meanwhile make the stock and measure out the milk and add them to the pot
  4. Season with salt and plenty of pepper. Bring the pot to the boil and then reduce the heat and simmer until the potatoes are soft (approx 20-30 mins)
  5. Once cooked, leave to cool and then blitz with a stick blender until smooth. You could serve with cream or creme fraiche.
