The ingredients needed to make Tom Yum Soup:
  1. Prepare Raw shrimp - 200 grm (medium-size)
  2. Take Chicken fillet - 200 grm

  5. Get Lemongrass - 2 stalks fresh lemongrass - smash
  6. Make ready Kaffir lime leaves - 3

  8. Get Fish sauce - 2 tblsp

  10. Get Straw/Button mushroom - 100 grm - sliced
  11. Make ready Sliced carrots
  12. Get Cauliflower
  13. Prepare Thai chilli paste - 4 tblsp (can add or reduce)
  14. Get 2 tbls Dried red chilli paste -
  15. Make ready Garlic - 4 pods - crushed
  16. Take Maggi cube (curry) - 2
  17. Get to taste Salt
  18. Take to taste Sugar
Instructions to make Tom Yum Soup:
  1. Use a meat mallet or the side of a knife to smash the lemongrass, kaffir lime leaves, onion and garlic. (Kp aside)
  2. Grind/blend dried chilli & thai chilli into thick paste. (Kp aside)
  3. Add oil into a pot. Add smashed ingredients followed by the chilli pastes. Stir well and add water. Simmer for 5-10 minutes, until the broth smells fresh and fragrant.
  4. Add in the carrot, cauliflower, mushrooms, shrimp, chicken fillet and fish sauce. Simmer just long enough for the chicken and shrimp to cook.
  5. Add in the lime juice, maggi cubes, sugar and salt. Stir well. Cook for 5 more minutes. Serve hot.
