Instructions to make Gareth’s Shakshuka:
  1. In a little olive oil, fry the pork sausages for 10 minutes on a medium heat. Once cooked, remove from the pan and set aside.
  2. Add the mushrooms and fry until golden brown. Add the chopped leek and garlic and cook until the spinach is wilted.
  3. Add the tinned tomatoes and harissa paste.
  4. Add the cannellini beans then stir and cook for a minute.
  5. Add the pork bangers back into the pan to further cook in the sauce.
  6. Making a little well with a large spoon into the shakshuka for each egg, crack the egg into the open space. Season with salt and pepper.
  7. Turn off the heat and place the pan (using a pan that has a stainless steel handle) into a preheated oven at 180 degrees C. For 2-5 minutes to cook the eggs. Remove from the oven and serve hot with toasted bread.
