  2. Prepare 100 gms Onion chopped
  3. Make ready 12 Garlic cloves chopped
  4. Take 120 gms Tomato chopped
  5. Make ready 150 gms Spinach / Palak (blanched n chopped)
  6. Take 150 gms Mushroom chopped/ Few sliced for garnishing
  7. Take 1/4 tsp Turmeric powder
  8. Prepare 1/2 tsp Kashmiri Red chilli powder
  9. Take 1 tsp Veg oil
  10. Get 20 gms Butter
  11. Get to taste Salt
  12. Prepare pinch black pepper powder
Steps to make Spinach mushroom with egg in Shakshuka style:
  1. Wash and Blanch the spinach first. See how to blanch in the egg pizza recipe linked here. - (see recipe)
  2. Chop and slice all veggies as needed. Heat butter and veg oil in a pan saute the sliced mushrooms first and take it out after a minute or so…we will use this as garnish….rest of the mushroom we will cook with the other ingredients.
  3. In the same butter oil mix, saute the garlic, then add onion and saute it…add salt and pepper too. After that add tomato and cook, add about 1/4 cup hot water to cook and soften the tomato. Add Turmeric and chilli powder too….cook it. Add more water if required about 1/4 cup.
  4. When tomato is cooked more than 60% add the green onion and mix well…then add the blanched and chopped spinach and cook for sometime.
  5. Then make some space to add the eggs….lower the flame and add the egg one by one…close it with a lid and cook on low flame till the eggs are done but the yolk should be runny so don't overcook it…it took me about 2:30 minutes.
  6. Serve it hot with soft flat breads / Roti
