The ingredients needed to make Gioulbasi:
  1. Prepare 600 g lamb cut into medium sized cubes
  2. Make ready 600 g stewing beef cut into medium sized cubes
  3. Get 600 g pork (front leg/shoulder) cut into medium sized cubes
  4. Make ready 4 ripened medium size tomatoes
  5. Get 4 medium size green peppers
  6. Take 350 g greek kefalotyri or pecorino romano cheese in cubes
  7. Take 1 glass wine
  8. Make ready 2 chopped garlic cloves
  9. Get salt, pepper, oregano
  10. Get 1/2 cup olive oil

Steps to make Gioulbasi:
  1. Wash the meat and dry it with a paper towel. In a big bowl place the meat and rub it with salt, pepper, oregano and the chopped garlic.
  2. Wash the tomatoes and peppers and cut them in thin rounds (as you do for a pizza).
  3. Place half the meat quantity in a casserole dish and add in between the meat pieces, half the pecorino cubes.
  4. Lay on top of the meat, half of the cut peppers and then half of the tomato rounds.  On top of the tomatoes, add the remaining meat, cheese, peppers and tomatoes in this order (as we did above).
  5. Drizzle with the wine and olive oil and cook in a pre-heated oven in 200 deg C, for about 2 hours.
