Generally this jackfruit preserve is made during jackfruit season and is stored for future use."Chakka" is a Malayasam word which means Jackfruit and "Varatti" means to cook until there is no moisture. You can preserve Jackfruit by using this method. It is a food made from Jackfruit.

  1. Get 1 Jackfruit medium(riped)
  2. Take 6-7 cup Jaggery
  3. Prepare 1/2 cup Ghee

I have seen my grandma to start early in the morning and finish by the late night. Start from peeling the skin of jackfruit cleaning and cutting into finely chopped pieces. Chakka varatti is an authentic Kerala recipe made with jack fruit and jaggery. During my recent trip to India for my niece wedding, we as a group of family members were sitting and talking in the evening.

Steps to make Chakka Varatti or Jackfruit Preserve:
  1. Remove the jackfruit pods and deseed them. Grind the jackfruit pods to a smooth paste. Pressure cook in a vessel for 3 whistles.
  2. Heat a heavy bottomed Kadai or Uruli, add the jaggery.
  3. Dissolve the jaggery in about 1 cup of water.
  4. Let it boil on medium heat till one string consistency.
  5. Then add the pureed jackfruit and cook on medium heat, stirring once in a while to avoid burning.
  6. Do not cook on high flame.
  7. Once all the moisture is absorbed and the mixture starts thickening add the ghee little at a time or whenever you feel the mixture sticking to the botto
  8. Keep stirring and cooking till the mixture leaves the sides of the kadai.
  9. Remove from flame and let it cool naturally. Transfer into clean containers and keep dry.
  10. Delicious chakka varatti is ready. Eat it as it is or makes ela ada, Pradhaman or have it with Adai or even as bread spread.

Chakka varatti is an authentic Kerala recipe made with jack fruit and jaggery. During my recent trip to India for my niece wedding, we as a group of family members were sitting and talking in the evening. Also mami shared the recipe of payasam they make with this jackfruit preserve. And this Chakka Varatti or Jackfruit Jam / Preserve is also rich in nutrients and other proteins. Chakka Varatti is Kerala's traditional dish Chakka Varatti or Jackfruit Preserve can be eaten along with bread, chapati etc., We can also make payasam or ada ( rice batter ) using this Chakka Varatti.
