Steps to make Jackfruit Pickle:
  1. In a bowl add boil jackfruit in a sauce pan for only 5-6 min.strain the water completely.and leave jackfruit to dry up.you might have to pat it dry.add termeric powder and add salt mix it well properly.when cool and dry.
  2. Now take a tawa add coriander seeds,add carom seeds,add cumin seeds
  3. Add cumin seeds,add dry red chillies and add yellow mustard seeds.now dry roast all ingredients for 5-6 min.now take a jar and put all the dry ingredients into the jar.
  4. Now grind it and make a smooth powder.achar masala is ready.now take a mixing bowl add marinated jackfruit add vinegar
  5. Mix it well.add achar masala powder mix it again.now coat all masala over the marinated jackfruit.
  6. Add mustard oil pour into the jackfruit mix it again.add kalaunzi
  7. Add red chilli powder,add salt,add black salt,add asafoietida
  8. Mix it again.take a jar and fill the jar with pickle.add oil, aroma is very strong.cool to room temperature and pour over the jackfruit.
  9. Now cover the jar with cloth and pack this tightly into jar.the oil should come above the jackfruit mixture.let the pickle mature for another 2-3 days before you consume it.for all pickles,ensure that it stays covered with oil,that they stays good throughout the year.pickle is ready.
