  1. Split the brined jackfruit flesh to get long, slender strips (like French fries) & place it in clean water upto 30 mins to remove the excess salt. At regular intervals (thrice) change the water. Meanwhile, dry roast coriander seeds & the dry red chillies. Cool it down and powder it in a mixer.
  2. Drain the water from the jackfruit strips and transfer it to a clay pot. Add the dry roasted & powdered masala, a pinch of turmeric powder, half cup water and cook it in medium flame. When the water bubbles simmer it and cook for 10 min with occasional stirring. Check & add salt only if necessary as the jackfruit is brined already. Cook it al dente, avoid over cooking. When the water dries up add in the grated coconut & give a thorough mix. Cook for 30 sec & switch off the flame.
  3. Take coconut oil in a pan. Add in the split urad dal. Splutter the mustard seeds, add the asafoetida powder, broken byadagi chilli & curry leaves. Temper it on the upkari. The uppad pachir upkari is ready to be served.
