I usually like to serve it as a quick, healthy, midweek meal.

  1. Prepare 2 fillets smoked haddock- in chunks
  2. Take 1 onion chopped
  3. Prepare 2 eggs
  4. Take 1 tbsp curry powder
  5. Get Frozen peas
  6. Take 1 packet pre-cooked rice
  7. Take Handful spinach
  8. Get Olive oil
  9. Get 100 ml milk

If you can't get smoked haddock kedgeree. This really good kedgeree from the Hairy Bikers makes a wonderful brunch or lunch. Spicy and delicious, this kedgeree is dead easy to make and perfect for a big family brunch. Some people love peas in a kedgeree and some don't - it's up to you.

Instructions to make Kedgeree- simple and quick:
  1. Boil a saucepan of water, once boiling add the eggs. After 6 minutes place them in a bowl of cold water.
  2. Drizzle some oil in a pan and gently fry the onions. After 3 mins add the curry powder and gently cook for 3 more minutes
  3. Add the frozen peas, stir and cook until defrosted
  4. Throw in the fish chunks and cook until the fish turns opaque and flakes
  5. Crumble in the rice, pour in the milk, throw in handful of spinach and cook for 4 minutes until all combined. Squeeze in half a lemon and Season to taste.
  6. Meanwhile, peel the eggs. Gently tap them on a chopping board until the shell is cracked all over, then the shell should peel off easily
  7. Spoon the kedgeree into bowls and slice the runny egg in half over the top!

Spicy and delicious, this kedgeree is dead easy to make and perfect for a big family brunch. Some people love peas in a kedgeree and some don't - it's up to you. Simple version of the Scottish/raj dish kedgeree using tinned fish for convenience. A lovely tasty dish and really easy to make, perfect for a quick dinner!
