Get 1 medium onion (finely chopped)
Take 3 tbsp olive oil
Prepare 2 garlic cloves (minced)
Prepare 1 tsp plain flour

Take 1/4 tsp ground black pepper
Get 1/4 tsp kosher salt or sea salt

Take 1 Fresh red chilli, sliced or chilli powder (optional)
Make ready 1 tbsp tomato paste
Prepare 1 tsp freshly squeezed lemon juice
Take 50 ml water (more or less)
Instructions to make Mussels in White Wine Sauce:
Heat the olive oil in a pot on a high medium heat.
Sauté the onion and garlic until the onion has softened.
Stir in the flour, and cook for around 1 minute.
Next add the bay leaf, lemon juice, white wine, salt and pepper.
Simmer and cover with lid for around 5 minutes.
Add the tomato paste and stir. Simmer for another 3-5 minutes.
Add the mussels to the pot and stir. Simmer the mussels for around 5-10 minutes or until they have opened their shells.
Add water and toss the pan if the liquid thickens too much.
Check seasoning prior to turning the heat off.
Lastly, sprinkle with the parsley, stir well and serve.
