Lettuce wraps filled with spicy chickpeas and topped with a creamy cilantro sauce. These quick and flavorful lettuce wraps make a nutritious fiber packed. In a medium bowl, add dried chickpeas, olive oil, chili powder, cumin and generously season with salt and pepper. For this version, I used just a few simple ingredients: sriracha, vegan mayo, lemon, sea salt, pepper and garlic powder.

  6. Take 8 wraps

  8. Get Spices to taste :

  11. Prepare Smoked paprika
  12. Take Cayenne pepper
  13. Prepare Salt

In a medium bowl, add dried chickpeas, olive oil, cumin, chili powder, cayenne pepper and salt. Spread chickpeas out on a parchment paper-lined baking sheet. Add the prepared prawns, cover and marinate in the fridge for about an hour. For the curry, lightly salt the aubergine chunks placed in a colander over a bowl.

Steps to make Spicy prawn, chickpea and pepper wrap:
  1. Mix spices together. Chop onion and pepper. Cook together in a little oil for a few minutes. Add spices
  2. Add tomato sauce and a little water. Cook for 2 mins on medium heat. Add the prawns and mix
  3. Then add the drained chickpeas and mix again. Cook for another 2 mins or so. Serve with wraps and salsa ๐Ÿ’ƒ

Add the prepared prawns, cover and marinate in the fridge for about an hour. For the curry, lightly salt the aubergine chunks placed in a colander over a bowl. Add the fried aubergine cubes, chopped plum tomatoes and chickpeas to the softened onions. Make slaw: Whisk together vinegar, oil, salt, and pepper in a medium bowl, then gently stir in carrots and radishes. Chickpeas have been pulverized into humble hummus for too long.
